The Perfect Fall Sweet Treat – Pumpkin Chocolate Muffins

Ingredients 

  1. Line baking cups with cupcake wrappers and preheat your oven to 400 F
  2. Gather all of your ingredients except for the chocolate chips and add to a large mixing bowl or stand mixer with the paddle attachment 
  3. Stir together until just combined, and use a large spoon to gently incorporate the chocolate chips, reserving a few for the tops of each muffin, if desired. 
  4. Place batter into each muffin cup until ⅔ full, leaving room for the muffin to expand. 
  5. Garnish the tops of each muffin with extra chocolate chips, if desired
  6. Place in the oven for 15 minutes or until a tester comes out clean. 
  7. Remove from muffin tin and place onto a wire rack to cool. 
  8. Enjoy!

Ingredients

  • 1 1/3 C flour

  • 1/2 C unsweetened applesauce

  • 1/2 C pumpkin puree

  • 1 egg

  • 1/2 C honey (or maple syrup)

  • 1/2 C chocolate chips

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp apple cider vinegar

  • 1/2 tsp pumpkin pie spice

  • 1/2 tsp ground cinnamon

  • 1/2 tsp salt

  • 1 tsp vanilla extract

Directions

  • Preheat oven to 400 F.
  • Combine all wet ingredients (applesauce, pumpkin, honey, vanilla, ACV, and egg) in a stand mixer with the paddle attachment.
  • In a separate bowl, whisk together the flour, soda, baking powder, salt, pumpkin pie spice, and ground cinnamon.
  • Slowly incorporate wet and dry ingredients together, being sure not to overmix.
  • Using a spatula, fold in the chocolate chips into the batter.
  • Using a muffin tin, fill each cup until it is 2/3 filled with batter.
  • Bake for 15 minutes, or until a tester comes out clean.
  • Cool on a wire rack or enjoy right away!
